This is one of my favorite, fairly recent and easy to make meals (photo pending). It also reheats well which is a serious factor in deciding which meals to make in large batches for leftovers when dealing with GF components.
Ingredients:
+ 16 oz GF Fettuccine (Notta Pasta is my favorite)
+ 2 cups Almond Milk (unsweetened, unflavored) - coconut milk might be nice because of the fat content but my husband can't have it so let me know if you try it!
+ 4 TBS White Rice Flour (sorghum flour works as well- you want a fine flour with subtle flavor)
+ 4 TBS GF Earth Balance (not whipped!)
+ 1 Head of Broccoli, steamed and chopped (seasoned with salt and oil)
+ 1-1.5 lb of Roasted Chicken, sliced or chopped (seasoned with salt, at the minimum)
+ Garlic powder (to taste), fresh would also work but you would need to brown it with the flour
+ Salt (to taste)
+ Pepper (to taste)
+ Italian Seasoning (to taste) - if you don't have any mix up equal parts basil, oregano, rosemary, thyme and marjoram
Instructions:
1. Get water boiling for pasta
2. Put sauce pan on med. heat (the taller the better)
a) Place Earth Balance in the pan
b) Add the flour and immediately whisk together
c) Add almond milk and keep whisking
d) Let mixture heat up (keep whisking periodically) until it starts to thicken.
e) Add garlic powder, salt, pepper and Italian seasoning to taste
f) Remove from heat once it starts foaming up when you stop whisking, cover with lid
3. Once water is boiling add the fettuccine (with salt and oil) to the pot and cook it for one minute less than the prescribed time
N.B. If you try a different pasta or aren't sure you got the water hot enough always test a piece before you strain it to make sure it's close to being done.
a) Make sure you stir the pasta frequently and really try to break the clumps of pasta up
b) Strain the pasta and rinse with cold water (remove or break apart any remaining clumps)
4. Return the pasta to it's pot over med. heat and add in the sauce, chicken and broccoli. Stir well but gently/patiently!
a) It should take you a minute to successfully incorporate the ingredients, by which time everything should be melded together deliciously and cooked fully.
5. Serve in a big bowl and enjoy!
